Turkey Meatloaf Turkey Meatloaf
(if you're a veggie, use "textured soy protein")

Ingredients: Ground turkey (Turkey mince): one package

One egg

Oatmeal and/or flaxseed meal

One cup of Salsa (Pace works well)

Chopped garlic and finely chopped green pepper or green onion

Pinches of onion salt and pepper

Directions:

Here's the deal. You can get ground turkey anywhere. It comes from "Jenni-O" turkeys in Minnesota. Or maybe even Butterball. Not pricey.

Set your oven for 375 degrees.

Get a big bowl. Wash your hands. Prep your garlic and peppers or onion, then rip into that turkey package and mix all of your ingredients together with your hands.

Get a loaf pan, oil it with olive oil. Press your turkey loaf into the pan, tuck into the oven and bake for about 35-40 minutes.

In the meantime, get your spuds going, and steam some broccoli.

You can mash your tatties or serve them with a wee bit of marg or butter and parsley.

You can probably put this whole meal together for about ten bucks. Get a bottle of two-buck chuck on top of that if you'd like, and you've got a comfort meal for four, or for two really hungry buggers.

Try it and let me know what you think.
